Letting wine "breathe" is like
letting you breathe! When you get that fresh breath of oxygen, it circulates
inside you and enables you to be alive. And so it is with good wine. It means
exposing the wine to air by uncorking it, pouring it in a glass or a decanter.
Different wine experts will give you
differing opinions about wine "breathing". Some will say that all
wines need to "breathe" before you can enjoy it. Others will say that
dry red wine needs to breathe before it tastes like it should.
Some wine connoisseurs will advise you to
let wine breathe for 10, 20, 50 minutes or more. If you leave wine for 50
minutes and the temperature is too high for your wine, and you leave the wine
outside the fridge, you'll ruin the wine.
